Knut and my father, Axel Dietrich, shared a friendship of nearly 60 years together!
They both were Berlin-born and classically-trained in the best culinary schools and hotels in Europe before immigrating to Milwaukee. (When your early years growing up were in bombed-out, post-war Berlin? And you are asked about a vocation? They both chose "chef", because they both told me that assured them of never being cold or hungry again. WOW!!)
Both were highly successful gourmet Chef's in the Milwaukee area (my father ran The English Room and Harold's, both iconic restaurants along with Grenadier's), both were local founding members of the exclusive, world-renowned culinary organization "Chaines des Rotisseurs", both played for and were members of the Bavarian Soccer Club, both shared a love for golf, and both shared the same European work ethic and passion in all-things food and beyond.
With Knut's diagnosis and personal situation that he faced late in life, Axel would make frequent visits to Knut, as recent as a week ago, sharing stories new and old, would drive him for doctor visits as well as for the golf/dinner outings, and would joke about having not one, but TWO Berlin teams in the Bundesliga!!
Prosit, Knut!!!

Knut represented the epitome of foodservice professionalism in everything he did. From his cooking techniques to his teaching abilities, he was one of the last trail-blazing Chef-owners that put Milwaukee on the map as a leading city for fine cuisine.
My deepest sympathy to the family of Knut Apitz.

We're so sad to hear of Knut's passing. Our deepest sympathy to Ursula and family.
Knut was a friend and fellow culinarian. When we were planning to open our first restaurant in Milwaukee, Knut was so generous with his time and advice, putting us on a path to success.
He was a rare breed of chef who not only had a complete mastery of the culinary profession, but also understood the importance of hospitality and bringing guests into the "comfort zone", as if they were visiting his home.
Part of my decision to move back to Milwaukee from N.Y.C. was that a world class restaurant such as Grenadier's could not just survive, but thrive in the city.
After collaborating with Knut on many out-of-house dinners over the years, we'll miss his confidence, exuberance, and snappy smile.
Rest in peace, my friend.
